Bowl of Love: Crockpot Vegetable Soup
For Valentine’s Day this year I decided to make a healthy “bowl of love” for my family, filled with veggie goodness and my favorite kitchen gadget - the crockpot. And my crockpot is extra special since it’s wifi-enabled (so I can control it from an app at work)! Yes, it’s amazing. And so it this soup. Even my toddler gobbled it up - Happy Valentine’s Day!
INGREDIENTS
- 1 cup carrots chopped
- 1 cup onion diced
- 2 cups potatoes cubed
- 1 cup corn
- 1 cup peas
- 1-2 tablespoons minced garlic
- 1 can diced tomatoes drained
- 1 can white beans drained
- 1.5 cartons beef broth
- 2 bay leaves
- Salt and pepper
- 2 tsp oregano
- 2 tsp thyme
DIRECTIONS
Put anything in the pot you've got! Don't stress if you don't have every ingredient. This is a mom survival tip for you. :)
Chop up the fresh vegetables (carrots, onion, potatoes). I prepped mine the night before so I could just throw it all in the crockpot on our way out the door!
In the morning, put the fresh veggies in the crockpot.
Add a cup of frozen corn and peas.
Add a can of drained diced tomatoes and white beans.
Add a tablespoon or two of minced garlic.
Add salt, pepper, oregano, thyme, and bay leaves.
Pour in about a carton and a half of beef broth (or any broth you want). Enough to cover all the veggies.
Cook on low for 8-10 hours or high for 4-5 hours.
Make sure the potatoes are soft. Remove bay leaves and serve!
KIDS OPTION: Add some cooked pearled couscous or tiny shell noodles to their bowl.
