Loaded Steak Fajitas
We live in Southern California (if you can't tell), and in this area the tortilla is where it's at! Fish tacos, quesadillas, breakfast burritos, fajitas - you name it! Anything in a tortilla just works. It doesn't even have to resemble a traditional taco. And meatless tacos are great too - beans and cheese, avocados and fresh cilantro - the combinations are endless.
Last night we made steak fajitas, and they were just awesome! I layered meat, grilled veggies, salsa fresca, avocado, chipotle sauce and shredded cheese. Just melts in your mouth. And if you're vegetarian, just leave out the meat - you won't be missing anything. I had portobello mushrooms in my veggie mix too, and they are meaty enough to fill up a taco on their own.
INGREDIENTS TACOS
Steak
Veggie Mix (zucchini, red peppers, onion, mushrooms, etc)
Shredded cheese
Avocado
Tortillas
Salsa Fresca (tomato, onion, cilantro)
Chipotle sauce
INGREDIENTS CHIPOTLE SAUCE
½ cup mayo
½ cup sour cream
Juice from 1 lime
½ tsp garlic salt
2 tablespoons milk
2-3 tablespoons adobo sauce from can of chipotle peppers (add as much as you like!)
Fresh cilantro (optional)
