Summer Pasta Salad
If you're looking for a go-to lunch, there's nothing easier than pasta salad! And I'm not even going to give you ingredients or directions with this one - choose your own adventure. The only basic that you'll want is a great Italian dressing, something that you really like. Cause after you cook the pasta (and let it cool) you're going to dump it all over it.
For veggies, I like to cook mine a little bit so they're all little softer - like carrots, peas and broccoli - but that's totally a taste preference! I also absolutely LOVE black olives for the salty addition to the salad, but they are a turn off for some people. And you can add red peppers too, for color, or any other veggie. Just stick to ones that won't get too mushy - tomatoes can be tough.
And if you're from the Midwest like me, they love to add cubed cheese and summer sausage. But that takes the healthy out of this lunch....but it sure is delicious! Maybe just add it on the side so you only have a little.
